Potatoes are an early, smaller red skinnned with reddish/pink flesh. They have a low starch
content, so fry slowly. Stacy usually cubes them, boils them, then fries them for a treat.
Smashed or roasted over frying is a good choice. They are great with the tender and slightly
sweet cabbage. The cabbage, in fact, is called 'Tendersweet'. It is a small to medium flattened
cabbage that is delicate and tasty. We don't mind eating it as a salad cabbage, although prefer
it with smashed potatoes and butter/cream/salt/pepper.
